“The image above was shot last fall after a visit to Nash’s Ranch. I was introduced to Delicata squash (upper right). It is now by far, my absolute favorite squash. The slightly chewy edible peel is is a lovely contrast to the delicate, sweet flesh. Simply cut into ring, remove seeds, toss with a little olive oil & season with salt, pepper & a fresh grate of nutmeg, then roast in a hot oven until tender”
