Italian Antipasto Skewer’s

Serves 4

  • 1 package cheese filled tortellini (from the refrigerated section)

  • 16 jumbo black olives

  • 16 feta stuffed large green olives

  • 1 pint cherry tomatoes

  • 3 oz. dry hard salami cubed

  • 1 cup Italian dressing (or Caesar)

  • 12 wooden skewer’s*

Prepare tortellini according to package instructions. On skewer’s alternately thread tortellini, olives, tomatoes & salami. Place in a large plastic zip lock, pour dressing over & allow it to marinate in the refrigerator for 1-3 hours flipping the bag occasional to evenly distribute marinade. Remove from marinade and serve.

Chef Notes: For simplicity, you may use a quality purchased Italian dressing or Caesar. Though they both give a different mouth feel (the Caesar is creamier) they are both delicious. If you wish to serve this in a bowl as a Antipasto Pasta Salad, then I highly recommend using the Vinaigrette recipe below as it is vibrant & will elevate the overall flavor profile.

Fresh Lemon & Herb Vinaigrette

makes 1 cup

  • 1/3 cup white vinegar

  • juice & zest of 1 lemon

  • 1 tsp. spicy brown mustard

  • 3 cloves of garlic, minced

  • 1/2 tsp. salt

  • 1/4 tsp. cracked pepper

  • 1 tbsp. fresh, chopped Italian herbs (oregano, lemon thyme, rosemary in any combination)

  • 2/3 cup olive oil

Combine first seven ingredients in a small bowl. Slowly in a steady stream, whisk in olive oil until incorporated & emulsified.
