Brown Butter Brussels with Toasted Walnuts
This a simple yet elegant side that compliments almost any dish. I never met a roasted vegetable I didn’t like. Roasting accentuates the sweetness while the brown butter elevates & gives depth to the humblest of vegetables.
8 servings (1/2 cup)
2 lbs. brussels sprouts
1/2 cup butter
1/2 cup chopped walnuts
Preheat oven to 400f. Steam brussels sprouts 5 minutes. Place butter in a small sauce pan & heat over over medium heat until it foams up, turns a amber color & gives off a nutty aroma, 5-7 minutes, remove from heat. Toss brussels with brown butter & roast for 10 minutes or until golden brown in spots. Meanwhile lightly toast walnuts in a skillet then scatter over roasted brussels.
