Elotes Nourish Bowl (a composed salad)

serves 2

  • 3 oz. mixed baby greens

  • 1/4 cup cilantro, chopped (reserve a pinch for garnish)

  • 1/4 cup micro greens

  • 1/4 cup green onion, sliced thin on a bias (reserve a few for garnish)

  • 1 ear of Mexican grilled corn (Elotes), cut off the cob into strips

  • 1/4 cup Cojita, shaved thin using of the slab

  • 1/4 cup black beans, rinsed

  • 1 avocado, sliced (drizzle lemon juice over cut avocado to keep it from browning)

  • 5 cherry tomatoes halved (use multiple colors)

  • 1 small Jalapeno, sliced paper thin

  • 1 lime cut into wedges

A composed salad or bowl is meant to be presented on a large serving plate (or bowl), artistically displaying the vibrant elements. Begin by mixing your greens- first listed four ingredients & laying them out on the plate as a base. Lay out the key components of the salad- in this case we are featuring the elotes, Cojita cheese, black beans & avocado so that they are visually appealing. Finish with a flourish of garnish; halved cherry tomatoes, paper-thin slices of jalapeno & lime.

There are many ways you could dress this Mexican salad. The simplest, is with a little drizzle of olive oil with a fresh squeeze of lime & a grind of salt & pepper. Alternately if you have made the elotes recipe & have corn spread left over, simple thin with a little buttermilk, viola! Dressing. Or a simple whisk together of salsa & sour cream.
